Coming up with dinner recipes can sometimes be such a challenge for me. There are days when I literally draw blanks when it comes to cooking dinner. Days where I open the fridge and I pretty much have no idea what we will eat. So I grab the first few things I see and run with it! Sometimes the food turns out amazing, and other times, we just eat because….well,we can’t throw it away.

This happened to me recently – no surprises there – but this time the food turned out amazing. I was pretty happy but mostly surprised with how the meal turned out so I though I should share.

What you will need:

  • Potatoes (I used 4 medium sized ones). Just make sure you have enough to feed your family.
  • Beef Steak (used 3 pieces)
  • Lemon Juice
  • Salt & Pepper
  • Oil & Butter

What to do:

  • First peel the potatoes and cube them up into small pieces. Put them in a pot with cold water and add salt and a little butter then bring them to boil. Let them cook until soft.
  • While the potatoes are cooking; in a bowl, add the beef steaks, lemon juice(I add as much as possible so I don’t really measure), salt & pepper. Mix them together and set it aside to marinate.
  • Once the potatoes are cooked(soft), use a potato masher to mash them up to make potato mash. I always add some full cream milk to get that creamy nice finish to my mash. So at this point, I go ahead and add milk and continue to mash the potatoes. Just continue to mash and add milk until you reach your desired consistency of potato mash.
  • When you are done with the mash potatoes, using a little oil and a frying pan, fry the marinated beef steak (about 3 minutes on each side) until nicely coloured (brown).
  • And then your meal is ready.

You can go ahead and serve the food. I like to serve my food while it’s nice and hot :). I went ahead and garnished with a little bit of fresh parsley and it turned out amazing. This meal was a complete hit in my house. Even my 3 year old loved it. She had her mash potatoes with the beef steak strips and also a side of Salmon (just in case the beef was a bit tough for her little teeth) and she enjoyed it very much.

This took me about 45 Minutes to cook and I couldn’t be more happier. The less time I spend in the kitchen, the better.
